Pineapple & Shrimp Fried Rice
Approximate cost to prepare: Rice 50 cents; 1 can of pineapple tidbits on sale at 65 cents; green onion 20 cents; bacon $1.00;
and shrimp $5.99 a bag. Cost per serving $1.04.
4 cups cooked rice
2 tablespoon vegetable oil
3 large eggs lightly beaten
8 slices cooked bacon
1 pound uncooked, peeled shrimp chopped & deveined
8 ounce pineapple tidbits drained
1/3 cup chopped green onions
1/3 cup chopped fresh parsley
5 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon ground giner
1 teaspoon salt
1/2 teaspoon crushed red bell pepper
1. Prepare rice according to package directions for 8 servings. Spread cooked rice on a rimmed baking sheet and chill for 1 hour.
2. In a large nonstick skillet, heat 2 teaspoons oil over medium heat. Add eggs; cook, stirring frequently for 2 minutes, or until done. Remove scramble eggs from skillet. Wipe skillet with a paper towel.
3. Heat skillet over medium-high heat; add remaining oil. Add shrimp; cook, stirring frequently for 2 minutes, or until shrimp are pink and firm. Add eggs, rice, pineapple, green onion, bacon, and parsley to skillet; cook for 2 minutes or until throughly heated. Stir frequently. Remove from heat; stir in soy sauce, vinegar, ginger, salt, and red pepper. Garnish with fresh parsley if desired.
